Ingredients:
- 2 Chicken Breasts
- 8 Strips of Bacon
- Pack of Cherry Tomatoes
- Pack of Skewers
Rub for the Chicken:
- 2 Tsp Mustard Powder
- 1 Tsp Thyme
- 1/2 Tsp Paprika
- 1 Tsp Onion Powder
- 1 Tsp Garlic Powder
- 1 Tsp Salt/Pepper
Mix all the ingredients for the rub together in a bowl. Slice chicken into strips (two chicken breasts should leave you with 8 equal strips) and coat with the chicken rub. Set aside, and heat up your grill. Make sure to use a wet paper towel to clean the grill first (once it starts to get warm) so your bacon does not stick.
Put a cherry tomato at the end of each skewer. Put one end of the bacon over the skewer and follow with the chicken. Once the chicken is all the way on, wrap the bacon around the skewer and fasten over the top of the skewer. Put a cherry tomato on the end to hold the bacon end in place. Repeat 8 times.
Place on edge of grill (not over the flames) and let cook for 10-15 minutes (until the chicken is almost done) and then move onto the flames (this will cook up the bacon). If you put the skewers on the flame right away the bacon will cook before the chicken, and everything ends up dry.
