Winter has had a tight grip on us this year and when I need to warm up, this cup of hot cocoa always does the trick. I love to serve this with the classic Dutch cookie: Stroopwafel. (Hint: place the Stroopwafel cookie over the hot cup of cocoa for 1 minute before eating. The inside gets nice and soft and the flavor is greatly enhanced.
This recipe makes two small cups, feel free to double or triple the recipe depending on how many people you want to serve.
Ingredients:
1 Cup Milk (1% or 2%)
2 Tsp Heavy Cream or Half and Half
1 Tbsp Cocoa Powder
1 Tbsp Chocolate Chips
1 Tbsp Granulated Sugar
Fresh Nutmeg
Heat the milk over low heat until it starts to become warm. Add the sugar, cocoa powder and chocolate chips. Whisk vigorously until all the sugar and chocolate is dissolved. Grate in some fresh nutmeg (just a pinch) and pour into serving cups. Add 1 Tsp cream (or half and half) and stir.
TIP: whisking the milk as it heats makes it frothy and gives it a nice light texture.
