Quick Egg Patty

You can eat this on it’s own, or put it on a bagel with a few pieces of bacon.  All you need is a small egg pan and this cooks up in less than 5 minutes.

Ingredients:

1 Egg
1 Tsp fresh parsley (chopped)
1 Tsp grated Parmesan cheese
Salt/Pepper to taste
1 Tsp Butter

Heat pan over medium and add butter.  Once melted, add the egg and with a fork slightly scramble it.   Sprinkle on the parsley and cheese and let it cook for 2 minutes, undisturbed.  Add salt and pepper, then flip.  Cook for another 30 seconds to 1 minute.
