Shortcake Pudding

This is the perfect valentines treat to share with the one you love, especially if you don’t have a lot of time. Within 20 minutes you’re ready to pop this in the fridge and it’s ready to eat in 1 hour (and lasts up to 48 hours, so you can make it a night in advance).

Ingredients:

– 10-15 Strawberries (Sliced)
– 2 Tbsp sugar
– 1 Tbsp lemon juice
– 1 Tsp lemon zest

– 1 Package Vanilla Pudding
– Milk (follow the requirements listed on your package of pudding)
– 1 Package Nilla Wafers

– 2 Glass Cups

Slice the strawberries and place in a bowl.  Add the sugar, lemon juice and lemon zest.  Stir to combine and place in the fridge.

Make the vanilla pudding based on the package instructions.  Once ready, pour 1/2 of the pudding into the glass cups (make sure to put an equal amount in each cup).   Lay 4 Nilla wafers on top of the pudding in each glass.  Pour the remaining pudding over the Nilla wafers.

Put the glasses in the fridge until set, roughly 45 minutes to 1 hour. The Nilla wafers soften up as the pudding sets and become cake like (reminding me of fresh angel food cake – with less than half the effort).

Just before serving, top with the marinated strawberries and a sprinkle of icing sugar.
