Home Made Bruchetta

Ingredients:

  • 1 Package of Cherry Tomatoes
  • 1 Clove of Garlic
  • 1 Shallot
  • Fresh Parsley
  • 3 Tsp olive oil
  • Salt and Pepper (to taste)
  • Mozzarella Cheese
  • Bacon Bits or Prosciutto
  • French Baguette

Preheat oven to 350.

Slice the baguette into long thin pieces and lay on a baking tray.  Drizzle 1 tsp of olive oil over the bread, add salt and pepper, and put in the oven.  Bake for 2-3 minute and flip.  Add 1 tsp of olive oil to the other side, with salt and pepper.  Bake another 2-3 minutes.  Remove tray from oven (bread should be lightly toasted).

Slice Cherry Tomatoes into small pieces and place in bowl.  Chop the fresh parsley and add to the tomatoes.  Grate the garlic, and shallot, into tomatoes.  Drizzle 1 tsp of olive oil over the tomatoes and salt and pepper to taste.  Stir, and then set aside.

Grate the mozzarella cheese and layer on the toasted bread. Grated mozzarella melts a lot better than slices. Spoon the tomato mixture onto the toast.  Top with cooked bacon bits or raw prosciutto (the prosciutto will crisp up nicely in the oven so no need to fry or cook up before hand).  Let bake for 3-5 minutes (just until the cheese is bubbly).  Remove from oven and serve immediatley.

So far the only other cheese I’ve tried is White Old Cheddar, and it wasn’t as good. Any suggestions?
